Meatless Monday-5 spice tofu stir fry

5 Spice Tofu stir fry

1/2 package of 5 Spice Tofu  from Hodo Soy (I got it at costco)
1 carrot chopped
3 cups Italian Broccoli
splash of soy sauce
splash of water

I add everything to a large skillet over high heat. I maintain enough water to steam the veggies as I stir them around in the pan until cooked.

Serve with cooked medium grain brown rice, I add a splash of seasoned rice vinegar when cooking.

Chicken and Pasta with Vermouth sauce



Chicken and Pasta in Vermouth sauce

2 organic free range Chicken breasts, sliced in half. (I like Rosie's Chicken)
2 teaspoons goat butter (I'm allergic to casein, you can also use regular butter)
16 oz organic Turkey broth
1/4 cup vermouth (or to taste, I used Martini&Rossi extra dry vermouth, or white wine)
2 Cloves garlic, diced
handful of fresh basil, chopped
juice from 1/2 lime
Sprinkle of flour for thickener
8 oz organic bow tie pasta
Grated Pecorino cheese (I used Capricous from Achadinha Cheese)


Over high heat, place the butter in a large skillet with a lid, after it melts place the chicken flat in the skillet. Cook until chicken just turns golden. Flip. Add 1/2 of turkey broth, 1/2 of vermouth, garlic, and basil, bring to boil. Reduce heat to low, and cover. Cook for 5 minutes and flip chicken, cook for an additional 5 minutes, or until cooked through. Remove chicken onto a plate.

Bring water to a boil for the pasta, and cook.

While pasta is cooking...
Bring the vermouth and broth to a boil and reduce until it starts to brown. Add juice from lime. Add the chicken back and brown in sauce on both sides. Remove chicken to a plate.

Add rest of broth and vermouth to skillet, reduce until about 1/4 inch is left in the pan, (you want enough for the pasta sauce), sprinkle a little flour in. Use a whisk to blend it in. Remove from heat when the sauce has thickened.

Drain pasta, pour sauce over past and mix.

Serve pasta with grated cheese over the top, with the chicken, and I also served fillet green beans from our local farmer's market.
